How to find the right cup of coffee
In India, we don’t appreciate our local coffee and most of us get intrigued by coffee from other countries. This thought led Viggnesh to research about Indian coffee — he started procuring varieties of coffee beans, brewed it in different ways and understood the taste.

“My passion for brewing came one fine morning with my routine cup of filter coffee. That humble cup got me exploring the origins of different kinds of beans, and methods of brewing. Once I started grading coffee based on its taste and quality, I realised that Indian coffees are better than others across the world,” he says.
With the intention to educate Chennaiites about the greatness of Indian coffees, Viggnesh is organising a coffee tasting workshop at The Summer House Eatery on Saturday from 4 pm to 7 pm. “The coffee tasting is going to be called ‘Finding the Right Cup’. You’ll learn more about the origins of your coffee and how it is roasted. We will taste 7-8 of the finest batch of specially-curated coffees from all over the country (with unique blends and flavour profiles) and then garner a deeper understanding about fragrance, aroma, acidity, body, mouth-feel, coffee defects and roast profile,” Viggnesh explains.
The city-based independent coffee consultant is also an expert in coffee cupping. It’s the practice of observing the tastes and aromas of brewed coffee. “I will also be teaching how to taste coffees using diverse brewing methods including cold brew. Over the last four years, I have developed several signature brews, with experiment and control variables at every stage — from grinding to bean texture, temperature, and pressure. Ranging from handmade espresso, artisan south-Indian filter coffee, cold brews, and medium micro batch roasts in stove-top espressos, I will be teaching about different methodologies as well,” he remarks.
