The sweet and succulent watermelon is a summer favourite. Munch it fresh, slurp it in an ice-cold juice or even toss it into a savoury salad. Here are some delicious watermelon recipes to try this season

WATERMELON SALSA IN TACOS
INGREDIENTS
- Watermelon, seeds removed: 2 cupsÂ
- Cucumber, peeled and seeded: 1/2 cupÂ
- Onion, chopped: 1/4 cupÂ
- Red bell pepper, chopped: 1/4 cupÂ
- Yellow bell pepper, chopped: 1/4 cupÂ
- Jalapeño peppers, diced: 1 tbspÂ
- Fresh cilantro, chopped: 1/4 cupÂ
- Honey: 1 tsp
- Lime juice: 2 tsp
WATERMELON CHERRY TOMATO SKEWERS
INGREDIENTS
- Watermelon, seedless, cubed Cherry tomatoes, halved Coriander leavesÂ
- Olive oil: 1 tspÂ
- Lime Juice: 1 tspÂ
- Sugar: 1/4 tspÂ
- Salt as requiredÂ
- Toothpicks
METHODÂ
- Assemble the skewers by pushing half tomato, coriander leaf, watermelon cube, then the other half  tomato.Â
- Continue for all the skewers.Â
- Â Drizzle olive oil, salt and sugar mixed with lime juice syrup and serve chilled.

WATERMELON AND PRAWN COCKTAIL
INGREDIENTS
- Large prawns: 750 gmÂ
- Medium-sized watermelon: 1Â
- Cucumber: 2 Iceberg or romaine lettuce
FOR DRESSINGÂ
- Salt: 1 tspÂ
- Sugar: 1 tspÂ
- White pepper: ½ tspÂ
- Mustard paste: 1 tspÂ
- White vinegar: 2 tbspÂ
- Olive oil: ¼ cup
FOR COCKTAIL SAUCEÂ
- Mayonnaise: 350 mlÂ
- Juice of 1 lemonÂ
- Tomato sauce: 6 tbspÂ
- Worcestershire sauce: 2 tbspÂ
- Paprika: 1 tspÂ
- Tabasco sauce: 1 to 2 tspÂ
- Fresh cream: 100 mlÂ
- Salt to taste
METHOD
- Cook prawns with shells in boiling salted water for about 5-6 minutes. When cool, remove shell and black vein. Keep aside.Â
- Scoop melon into balls, remove the seeds.Â
- Peel and cut cucumbers into ½ inch dices, discarding the core.Â
- Toss dressing through melon and cucumber. Place in a colander to drain. Chill well. Mix together all the ingredients of the cocktail sauce.Â
- Mix the prawns, watermelon balls and cucumber. Check seasoning.Â
- Line 6 glasses with lettuce leaves and fill with the cold cocktail.Â
- Serve chilled.
TANGY WATERMELON PUNCH
INGREDIENTSÂ
- Watermelon juice: 6 cupsÂ
- Sprite: 400 mlÂ
- Orange juice: 200 mlÂ
- Lime juice: ¼ cupÂ
- Ginger juice: 2 tbspÂ
- Ice cubesÂ
- Mint leaves and lime slices for garnishing
METHODÂ
- Combine all the ingredients in a jar and mix gently with a spoon.Â
- Spoon into punch cups and serve with mint leaves and lemon wedges.Â
