Cauliflower recipes for a delicious keto diet

Cauliflower Quiche
Ingredients:Â
Cauliflower: ½ of a medium sized one
Spinach: 2 cups washed and chopped
Mozzarella cheese: ½ cup
Egg whites: ¼ cup
Cottage cheese: 1/8 cup
Sunflower seeds: For garnish
Method
- Cut off the cauliflower stem and chop it into small florets. Blitz it in a blender or a food processor until it looks like grains of rice.Â
- Microwave the cauliflower rice for about six minutes.Â
- Meanwhile, add the spinach, cheese along with a pinch of salt and black pepper into the blender and pulse it is finely shredded.Â
- Once the cauliflower is done, add the spinach mix, egg whites and cottage cheese and mix well.Â
- Take a tart pan and spoon in the mixture. Sprinkle with sunflower seeds on top.Â
- Bake for about 20 minutes and serve warm.
Cauliflower Popcorn
Ingredients
Cauliflower: 1 chopped into bite-sized pieces
Egg: 1
Milk: 2 tbsp
Breadcrumbs: 100 gm
Parmesan cheese: 25 gm
Garlic: 2 cloves chopped
MethodÂ
- Cook the cauliflower in a pan of boiling water until tender. Drain the water and allow the cauliflower to dry on a kitchen towel.Â
- In a bowl, whisk egg and milk together. Take another bowl and add the bread crumps, parmesan cheese, garlic, salt and pepper and mix well.Â
- Dip the cauliflower into the egg mixture and then toss into the breadcrumb mix.Â
- Deep fry the coated cauliflower bites in oil or bake in an oven by spreading on a baking tray.
