    Egg in bacon cups for breakfast

    Ingredients

    6 eggs

    6 slices bacon

    80 gm cheddar, grated

    A pinch salt

    A pinch black pepper powder

    Method

    • Take a muffin tray and grease with a little oil to stop the bacon and eggs from sticking.
    • Put one slice of bacon into each muffin slot, making sure that the bacon is wrapped around the sides and not on the bottom of the tin.
    • Crack an egg into each slot with the bacon. Sprinkle a little salt and pepper on top, and top it off with a sprinkling of cheese.
    • Bake in the oven for 20 minutes at 180 Celsius.

    Grilled cottage cheese salad

    Ingredients

    1 cup mint chutney

    250 gm block of paneer (cottage cheese)

    1 onion peeled and cut into quarters

    2 bell peppers cut into medium-sized cubes

    1 small head of romaine lettuce, washed

    2 tbsp olive oil

    1/4 tsp salt

    Method

    • Preheat a grill to medium heat.
    • Coat the cheese and prepared vegetables with half of the chutney.
    • Grill the cheese and vegetables for about five minutes per side. Remove the cheese when both sides have nice grill lines. Remove the veggies when they are softened.
    • To assemble the salad put the lettuce on a large platter. Top with the veggies. Cut the paneer into cubes and add to the salad. Drizzle with the olive oil and sprinkle with the salt. Serve with the additional green chutney.

    Chocolate keto bombs

    Ingredients

    100 gm dark chocolate, minimum 85 per cent cocoa solids

    1/4 cup coconut oil

    50 gm walnut, cut into small pieces

    1 tsp cinnamon powder

    8 drops liquid sweetener (optional)

    Method

    • Melt chocolate and coconut oil. You can do this in pot on the stove (low flame) or in the microwave. If you’re using unsweetened chocolate, adjust the amount of sweetener accordingly.
    • Crush the walnuts until you have small pieces. Keep a few larger ones to decorate the bombs.
    • Add the crushed walnuts and cinnamon to the melted mix.
    • Pour into silicone moulds or ice cube tray and freeze for five minutes until the tops are just set.
    • Remove from freezer and press the larger walnut pieces on top.
    • Place in the fridge for another 20 minutes or so until the bombs have set.
