A lot on their plate: Kerala lobster to Thanjavur chicken

Lobsters in Kerala style, chicken from Thanjavur, lamb with Andhra flavour and traditional, trademark sambar. When Chinese President Xi Jinping sat down to dinner hosted by Prime Minister Narendra Modi on Friday night, the spread that welcomed him was a delectable menu chosen from across South India.

The menu for the non-vegetarian spread included Malabar lobster (cooked in Kerala spices), kori kembu (chicken strips tossed with curd and chilli), mutton ularthiyadu (cooked with coconut), karuveppilai meen varuval (griddle cooked curry leaf flavoured fish), Thanjavur kozhi curry, yerachi ghetti kozhambu (mutton cubed cooked with dry coriander and spices), mamsam biryani (tender lamb with long grain rice in Andhra style), and assorted Indian breads.

The vegetarian dishes included arachavitta sambar (lentils stewed with grounded spice mix), thakkali rasam (spiced extract of tomatoes), beetroot gongura chop (beetroot and kenaf leaf with south Indian spice mix), and pacha sundakai aricha kozhambu (pea aubergine with tamarind and jaggery),

The desserts, too, were signature dishes from the South - ada pradhaman, kavanarasi halwa (black rice pudding) and mukkani ice cream (a three-fruit dish usually made with mango, jackfruit and banana)
