CREPES WITH CARAMELISED APPLE AND PEAR
INGREDIENTS:
For Crepes
- Milk: ½ cup
- Water: 2/3 cup
- Butter (melted): ¼ cup
- Vanilla: 2 tbsp
- All-purpose flour/Maida: 1 cup
- Sugar: 2 tbsp
- Salt: ¼ tsp
- Vegetable oil: 1 tbsp
- For caramelised apple and pear –
- Apple: 1 no Pear: 1 no
- Organic Brown sugar: 1 tbsp
- Butter: 1 ½ tsp
- Chocolate syrup or Hershey’s syrup: 1 tbsp
METHOD
For Crepes
- In a bowl, pour milk, water, melted butter, vanilla essence, vegetable oil and mix well.
- Add sugar, salt and mix well.
- Add all-purpose flour little by little and continue stirring, be sure no lumps are formed.
- Heat a tawa, grease it with butter, pour a spoonful of batter in the centre of the tawa and swirl it over the tawa.
- Cook in medium flame for 5 mins or until starts turning golden brown, swap the side and cook for 2 mins.
- Remove from fire.
For caramelising apple and pears
- Peel, de-seed and finely chop the apple and pear.
- Heat a tsp of butter in a pan, add the apple, pear along with organic sugar, cinnamon powder and cook until the apple becomes soft or until they get caramelised.
- Remove from fire.
Stuffing
- Keep the caramelised apple and pear in the centre of the crepes and roll it.
- Drizzle chocolate syrup and organic sugar over them. Your delicious fruitbased crepe is ready. This is the recipe for basic crepe, you can prepare fillings of your own and stuff them.
CHICKEN SAUSAGE LOLLIPOPS
INGREDIENTS:
- Chicken Sausage: 8 nos
- Corn meal /Maize flour: ½ cup
- Chilli powder: ½ tsp
- Garam Masala: ¼ tsp
- Salt to taste
- Black pepper powder: ¼ tsp
- Egg: 1 no
- Oil for deep frying
METHOD
- Take the corn meal, chilli powder, garam masala, black pepper powder in a bowl. Mix all these together.
- Pour in ¼ cup of water little by little and mix them well (be sure no lumps should be formed).
- Break in the egg and mix them well with the batter, let it rest for 5 mins (the batter should be little thick, so that it can coat the sausage).
- Heat the oil in a kadai.
- Chop the sausage into four equal halves, insert a tooth pick from the bottom.
- Gently roll the sausage in the batter, so that the sausage gets coated perfectly.
- Drop it to the oil and deep fry them for 3 to 4 mins or until it turns golden brown.
- Drain the oil and remove the sausage. Serve with mayonnaise and tomato ketchup.

EGGLESS FRENCH TOAST
INGREDIENTS
- 1 cup: 250ml
- Bread slices: 5 nos (milk bread or wheat bread)
- Custard powder: 1.5 tbsp (vanilla flavour)
- Sugar: 1.5 tbsp
- Boiled milk: 1/2 cup
- Cinnamon powder: 1/2 tsp
- Vanilla essence or rose white essence: 1/2 tsp
- Cooking oil or melted butter: to grease
METHOD:
- Take the custard powder, sugar, vanilla essence, cinnamon powder in a wide plate. Add boiled and cooled milk and mix well without lumps. I used a big plate as its convenient for dipping the bread slice. If you want, you can mix them in a bowl too.
- Now dip the bread slice on both the sides and all the corners.
- Heat a dosa pan and drizzle with oil or butter. Place the bread slice and keep the flame medium. Flip the bread after it turns golden brown. Cook both the sides and remove in a plate. Pack it with some chocolate sauce or honey or chopped fruits!
Notes
- Adjust the quantity of sugar based on your sweet buds. The quantity of sugar also depends on the sweetness of bread. I used 1.5 tbsp. Use just 2 tsp to 1tbsp for mild sweetness.
- Make sure the milk is boiled and is at room temperature. It should not be hot.
- You can replace custard powder with corn flour.
