    Here is a special four course menu that Executive Chef, Achal Aggarwal of Hilton Chennai suggested to a young professional for the occasion.

    TOFU SALAD

    Ingredients:

    100 gms mix lettuce 

    50 gms silken tofu 

    50 gms pepper juliennes 

    5 gms seaweed For the sesame dressing 

    300ml Japanese vinegar 

    200ml soy sauce 

    300gms castor sugar 

    20gms white sesame seeds 

    Method:

    • Cut tofu in half moon shape.
    • Mix assorted lettuce with sesame dressing and arrange on a plate in the centre. 
    • Place the tofu around lettuce. 
    • Pour little dressing on the tofu and garnish with pepper juliennes and sesame seeds.

    STRAWBERRY PARFAIT 

    Ingredients:

    4 cups sliced strawberries 

    1/4 cup granulated sugar 

    1 cup cream cheese 

    1/4 cup powdered sugar 

    1 tablespoon water 

    1/4 teaspoon vanilla essence  

    1 cup cookie crumbs (about 8 cookies) 

    1/2 cup whipped cream 

    Mint sprig

    Method:

    • Place 2 cups of strawberry slices and granulated sugar in a blender or food processor and process until smooth. Set strawberry puree aside. 
    • Combine cream cheese, powdered sugar and vanilla essence in a medium bowl; stir well with a whisk. 
    • Spoon 2 tablespoons cookie crumbs into each of 4 parfait glasses. Top each portion with 2 tablespoons strawberry puree, 1/4 cup strawberry slices, and 3 tablespoons cream cheese mixture; repeat the layers. 
    • Drizzle the remaining strawberry puree over each serving. Chill for 2 hours. 
    • Top each parfait with 2 tablespoons whipped topping and garnish with mint leaves.

    GRILLED LAMB CHOPS

    Ingredients: 

    1/3 cup dry breadcrumbs 

    3 tablespoons finely chopped fresh mint 

    2 tablespoons finely chopped fresh flat-leaf parsley 

    1 garlic clove, minced 

    2 (1 & 1/2-pound) French-cut racks of lamb (8 ribs each) 

    1/2 teaspoon salt 

    1/4 teaspoon freshly ground black pepper  

    2 tablespoons Dijon mustard 

    Method:

    • Preheat oven to 450°. Combine the first 4 ingredients in a small bowl.  
    • Sprinkle lamb evenly with salt and pepper.
    • Heat a large non-stick skillet over medium-high heat. Put some cooking spray. Add 1 lamb rack to pan; cook 2 minutes on each side or until browned. 
    • Remove lamb from pan. Repeat with remaining lamb rack. 
    • Brush Dijon mustard over lamb, and press breadcrumb mixture over lamb. 
    • Place the lamb on a rack coated with cooking spray; place rack in a roasting pan. 
    • Bake at 450° for 18 to 20 minutes. Cut into chops and serve.

    CHOCOLATE COVERED CHERRY MARTINI

    Ingredients: 

    45 ml chocolate liqueur 

    30 ml cherry vodka 

    30 ml white chocolate liqueur 

    1 cherry (preferably chocolate covered) 

    Ice cubes

    Mehod:

    • Chill martini glass by filling it with ice cubes and water.  
    • Add all chocolate cherry martini ingredients in cocktail shaker, filled with ice. Give cocktail shaker a good shake until frosted from outside.
    • Discard water from martini glass; strain and pour cocktail in it.
    • Garnish cocktail drink with cherry (you can also use chocolate shavings as a garnish) and serve.
