Luckily, for her, she has three able helpers at home — six-year-old Siddhan, his younger brother Samar and her husband Shakti. While the parents work during the day, the boys are away at school but come evening and the trouble starts. “‘What shall we eat for dinner?’ is the biggest dilemma I face as a mother; over and above that, I’m too tired to make elaborate meals yet I don’t want to serve food to my family that’s less in nutrition,” she says.

So the best solution lies in bringing the family into the kitchen. “Involving kids in cooking kindles their interest in not just food, but in the life skill itself, which I’m sure they’ll thank me for later on,” she smiles. So she plans for fun and easy meals to make with her band of boys — “They get bored of eating only Indian food so I try to incorporate elements from various cuisines, especially fast food, so we can make healthier versions at home.”

    MINCED CHICKEN BURGER
    Recipe by Deepika Khemchandani
    Ingredients
    250 gm minced chicken
    4 burger buns
    1 cup pickled cabbage
    1/2 cup Thousand Island dressing
    2 onions
    1/4 cup dill, cut
    Method:
    • Finely slice the red cabbage and in a bowl, add this along with some salt and leave covered overnight. Pour vinegar until veggies are covered.
    • Slice one onion into rings of even thickness and set aside. Finely chop another one and set aside. Squeeze some Thousand Island dressing into a bowl.
    • Stir the salt, dill and finely chopped onions into the minced meat. You can add some green chillies or ground black pepper for more flavour.
    • Shallow fry the minced meat patties and the buns (after slicing them in half). Place the buns on a plate, spread some dressing and place a few onion rings.
    • Carefully place a patty over the onions and add some cabbage pickle. You can add any grated cheese over this, cover with the other bun and serve.
