Matcha Lemonade

A modern twist on a classic summer drink, this beverage marries the bright tartness of lemon with the smooth, grassy depth of matcha for a perfectly refreshing harmony. Lightly sweetened and finished with a pinch of salt to accentuate its flavours, this cool green tonic is ideal for a midday pick-me-up or a mindful moment of calm.

Ingredients

1 tsp matcha powder

30 ml freshly squeezed lemon juice

30 ml simple syrup

Water, to top up

A pinch of salt

How to make

Whisk the matcha with a small amount of warm water until smooth and frothy. Add the lemon juice, simple syrup, and salt, and stir to combine. Top up with chilled water and mix gently. Serve over ice, garnished with a lemon slice or a sprig of mint for a bright finish.

Serving note:

For a spirited version, add a splash of gin or sake to transform your Matcha Lemonade into a serene yet sophisticated cocktail.

Coquito

Coquito is a traditional Puerto Rican drink, cherished across the Caribbean during the festive season. Often likened to eggnog, coquito is naturally egg-free and gets its rich, velvety texture from coconut milk and coconut cream. Gently spiced with cinnamon and nutmeg, this chilled drink is usually prepared ahead of time and shared with family and friends during Christmas and New Year celebrations. Rich, aromatic and comforting, coquito is a true holiday indulgence.

Ingredients

1 cup coconut milk

1 cup coconut cream

¾ cup sweetened condensed milk

¾ cup evaporated milk

1 tsp vanilla extract

1 tsp ground cinnamon

½ tsp nutmeg

A pinch of salt

How to make

Blend all the ingredients until smooth. Refrigerate for at least four hours or overnight. Shake well before serving. Serve well chilled, finished with a light dusting of nutmeg or a cinnamon stick.

Serving note:

For an adult version, add 1 to 1 1/2 cups of white rum or amaretto to the blended mixture before chilling.
