“In the backdrop of the Foodpro fest, Carboni says, “For more than 25 years I have been importing and distributing Indian products of cultural significance in Europe. I was running a catalogue of Ayurvedic and natural products from Auroville and other parts of India. I was also supporting social projects in Auroville. At a certain point, I decided to do something new. And that’s how the Gelato Factory came about. My brother is continuing our old business in Europe.”
Talking about his area of business, he says, “We have three standalone parlours at present, at Auroville, Puducherry and Mahabalipuram. Our gelatos are available at Dreaming Tree, in Tiruvannamalai, apart from high end restaurants in Puducherry like Villa Shanti, Palais de Mahe, and the Promenade. Three other shops also retail our products in Chennai (Nilgiris, ECR), Pondy and Auroville.
For me this enterprise is all about values and ethics. We are trying to promote something that people think cannot be done – 100 pc natural, healthy, low fat gelatos. We are also working on a range of gelatos that are vegan, diabetic-friendly (zero blood sugar) variants. Using fresh fruits, we make more than 25 vegan flavours. It’s a completely different concept and a unique kind of frozen dessert.
On his business plans, Carboni informs us, “Going forward, I need to finalise the distribution direction. I don’t have a franchising contract ready for the production. I am looking at two levels of franchising – the first being retail i.e. Café owners can open a corner (shop in shop model) or start a parlour with us, and we supply. In the second level, we will look at franchising for production and distribution.”
